At the beginning of the potato season, when we’re using newer potatoes, the naturally-occurring sugar content is very low and we do need to add a small amount of sugar dextrose to our fries to ensure they maintain that golden colour.
You can use fresh potatoes instead of frozen hash browns if you would like. You’ll need to shred the potatoes to be like hash browns, then put the shreds in a bowl of cold water. Then you’ll stir, drain, add more water and repeat a few times to remove the starch from the potatoes.
When potatoes are cut, especially into smaller flakes like your would for hash browns a lot of the starch begins to oxides and will cause the potatoes to turn gray. That starch is turning into sugar, mixing with the moisture in the potatoes which also causes it to become gummy.
It’s easier to turn the potatoes if you divide them into three parts. If you don’t use butter, the potatoes will still be delicious with just olive oil, although the outside browned crust may be slightly crunchier than with an olive oil/butter mix. A wooden mallet is good for breaking up frozen hash browns.

Another possible way to grate potatoes without a grater is to use a vegetable peeler with a sharp knife. Use the peeler to remove the skin off the potatoes and then shave it all over for producing thin slices. Spread it on the chopping board so that you can group them into small stacks later.
